These fresh hot sauces were the first I made and are inspired by the memories of my Trinidadian grandmother Ma’s cooking. What I learned from Ma was her respect and love for food. There was always a smile on her face as she was preparing a meal. Everything had to be fresh whether garden picked or from the market and her generosity ensured everyone who crossed her path was well fed. We make these sauces in small batches using our fresh Caribbean peppers. They are fresh lime juice forward – perfect for seasoning/ marinades, using as cook sauces or as condiments.
